GG says Mapel Syrup

I just read on the Garden Guru (David Goforth's blog that he harvests Southern Sugar Maple sap for mapel syrup. I'm guessing that is also known as the Southern Red Mapel. Does anyone know if this is correct? Any way next year I'm giving it a try and I can't wait. I'v always thought that it should be possable. I heard the sugar content is lower and it takes more and is harder to process.
